Hi there,
This site has gone quiet. I assume you're all mega busy at this time of year.

I just wondered what raw delights you are having this year over the Christmas period? Looking for inspiration. I will be eating raw - not totally sure what yet, but have to cook the traditional meal for eight others!

Sorry Liberty,

I just got out of the habit of checking the forum. I must try harder this year - and still would love to meet up!!

Had a good Christmas on the raw food front. Here's what we ate:

Raw mince pies These went down well with everyone who tries them, including my non-raw friend's non-raw children (who aren't easily pleased)!
'Pastry' of dates and soaked almonds. Filling of mixed dried fruit, soaked almonds, spices...

Spiced apple kuchen From Cherie Soria's Angel Foods This was tasty but looked rather brown and unappetizing!

Chocolate truffle puddings Raw choc, dates and walnuts, orange peel. V nice.

Spinach and mushroom quiche This was Christmas dinner for me and my Mum. Leftovers were snaffled by everyone else at tea time and pronounced delicious. This was a recipe I found some time ago on the internet. It's from Living Cuisine: The Art and Spirit of Raw Foods by Rene Loux Underkoffler. One of the most successful raw main meal recipes I've tried.

Salads Still ate lots of greens! Had marinated mushrooms on the side and the following pate:

Red pepper pate From my new favourite recipe book I am Grateful. An exquisite pate made with soaked raw cashews.

My favourite:

Persimmons Haven't been able to get enough of them the last few weeks/months. Get them in sackloads from the Asian fruit and veg shop. Have also raided the supermarket for them a few times. Get some odd looks pushing a trolley full of them! Christmas breakfast was a persimmon banquet.

And I love pomegranates too!!
